Who doesn’t love a refreshing salad in the summer? I’m partial to my weekly trips to Chop’t for my infusion of greens, but the lunchtime crowds and long lines provided just the encouragement I needed to start making my own salad and bringing it with me to work (saving time and money!).
My healthy eating kick is going on three months now and I have been enjoying my weekend meal prepping, delicious breakfasts with fresh fruit that I bring to the office, and actually having a stocked fridge—things I never thought I would say—or enjoy. But with that, comes the interest in trying out new dishes and ways to prepare meals for some variety.
Insert the Green Goddess Salad Dressing from Trader Joe’s. I have seen this dressing get a lot of love on Instagram and decided to pick it up on my last Trader Joe’s run. As the name implies, the dressing is full of greens, including avocado, green onion, cold pressed lemon juice, chives, basil, and garlic. Quite candidly, the dressing has greens in it that I wouldn’t normally dare to eat, but mixed together, taste amazing.
Last night I was in the mood for a quick salad for dinner. I grilled chicken a few nights before, so after a long day of work, all I had to do was wash some Romaine lettuce, add the chicken, pour the dressing over everything, mix together, and sprinkle grated Parmesan cheese on top. Voilà, dinner was served!
After one bite I completely understood why everyone was raving about this salad dressing. It gave my otherwise ordinary Caesar salad an incredible burst of flavor. While I was savoring every bite, I started thinking about other ways to incorporate this dressing. I could definitely see marinating and grilling up chicken or shrimp with it or adding it to a creamy Fettucine Alfredo dish for a little kick. The possibilities are endless.
If you’re not a huge fan of greens—fear not. The flavor of the dressing is mild and you will detect the lemon more than any of the other ingredients. I will certainly be using this dressing to top off my summer salads—and will be adding sliced watermelon in next time for an additional burst of flavor!
That salad dressing sounds so bomb! I have to try it. Anything with avocado in it is a must.
