When you’re short on time in the morning, stopping to make a healthy breakfast can feel like a chore. And, if you’re anything like me, who wakes up with just enough time to get ready in the morning, you know how hard it can be to find those extra few minutes to make breakfast…while still getting out the door on time.
So, when Kate of Taffeta & Tulips shared on her Instagram Stories about a healthy pancake recipe that required only two ingredients, I knew they were right up my alley.
These banana and egg pancakes take mere minutes to prepare (trust me, if I can make them as I’m running out the door, you can, too!), and will keep you full all morning long.
I followed Kate’s recipe, and here are the ingredients I used:
- 1 banana
- 1 egg
- Almond butter (I used Justin’s Vanilla Almond Butter)
- Cinnamon
To make these pancakes, start with a mashed up banana in one bowl. In a separate bowl, scramble one egg. Then mix the two ingredients together and pour in a pan. Be careful not to keep the pan on high heat, or else the pancakes will burn. I sprinkled cinnamon on top as the pancakes were cooking and spread almond butter on them as they cooled.
Top with your fruit of choice (I used raspberries), and you have yourself a simple and healthy breakfast that takes you as long to prepare as it would to grab breakfast on the go!
I still haven’t tried these even though I keep seeing them on Pinterest. It’s such a great healthy alternative and looks so yummy with the raspberries!
