
If you’re anything like me, you opt for a quick and easy breakfast that you can either throw in your bag as you run out the door or pick up on your way to work and eat at your desk. But most of us are working from home these days, which means we have more time to make (and enjoy) breakfast, right? Right!
I have been majorly craving a smoothie lately, which is odd, as I usually prefer them when the weather is hot out. So, on my last Trader Joe’s run, I picked up some frozen fruit to keep on hand. While I love smoothies, I’ve never made a smoothie bowl (although I’ve ordered them out many times). One of my favorites is an açai base with peanut butter and dark chocolate chips mixed in. It’s delicious!
When I had some extra time the other morning, I decided to try my hand at making a smoothie bowl (which is so simple to make). I love that you can pretty much use any type of fruit for your smoothie bowl and add in whatever you wish. On this occasion, I used two cups of the Trader Joe’s Berry Medley, which has blueberries, blackberries, and raspberries and blended it with one cup of almond milk. After that, I sliced up some bananas, sprinkled in a little cinnamon oat granola with flax seed from KIND, and added a scoop of Justin’s peanut butter on top. Sadly, I didn’t have any chocolate chips at home, or I would have added those, too.
And there you have it—a super easy and healthy breakfast that will keep you full all morning!
